recipe / banana pancakes with vanilla custard sauce

we had these pancakes for audrey's birthday and the custard sauce almost killed me. i literally ate it by the spoonful after i finished my pancakes. i don't even like pancakes usually, but anything covered in this sauce is bound to be heavenly. this pancake recipe is especially fluffy and delicious.

custard sauce:

2 cups whipping cream

1 vanilla bean, split lengthwise (or 1 tbsp vanilla bean paste or 1 tsp vanilla)

4 large egg yolks

6 tbsp sugar

place whipping cream in heavy medium saucepan. scrape in seeds from vanilla bean; add pod. bring cream to simmer. whisk egg yolks and sugar in medium metal bowl to blend. gradually whisk in hot cream mixture. return mixture to saucepan and stir over medium-low hear until custard thickens and finger leaves path when drawn across back of spoon, about 4 mins (do not boil.) strain. (can be served cold or hot).

banana pancakes:

1 1/2 cups all-purpose flour

3 tbsp sugar

1 1/2 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1 1/2 cups well-shaken buttermilk

3 tbsp unsalted butter, melted

2 large eggs

1 tsp vanilla

1 ripe large banana

whisk together flour, sugar, baking powder, baking soda, and salt in a bowl. whisk together buttermilk, 2 tbsp melted butter, eggs and vanilla in a large bowl until smooth. add flour mixture and whisk until just combined. cut banana into bits and fold into batter (or you can add slices into the pancakes once you have put the batter in the pan).

brush a 12-inch nonstick skillet with some of the remaining butter and heat over moderate heat until hot but not smoking. working in batches of 3, pour 1/4 batter into hot skillet and cook until bubbles appear on surface and undersides are golden brown, 1-2 mins. flip pancakes with a spatula and cook until golden brown and cooked through, 1-2 mins more. serve with custard sauce on top.

i have had these sweet morsels of goodness accompany most big events throughout my life. for starters, we have them every christmas eve, and most other holidays. they are seriously delicious and can really replace any meal, breakfast lunch or dinner. you are probably going to want to double the recipe, they will go fast!

Chocolate Covered Profiteroles (Cream Puffs)

Puffs:

1 c. water

1 c. flour

1/2 c. butter

4 eggs

Heat oven to 400 degrees. Heat water and butter to rolling boil. Stir in flour. Stir vigorously over low hear until mixture forms a ball, about 1 min. Remove from heat. Beat in eggs, all at once, until smooth. Drop dough by scant 1/4 cupfuls about 3 in. apart on ungreased cookie sheet. Bake until puffed and golden, 35-40 mins. Cool away from draft. Cut off tops; pull out any filaments of soft dough. Fill puffs with cream filling. Top with chocate ganache.

Cream filling:

prepare small instant vanilla pudding. whip 1 pint of cream and fold it in to the vanilla pudding.

chocolate ganache:

heat 1 square (1 oz.) unsweetened chocolate and 1 t. butter over low heat until melted. remove from heat. stir in 1 c. powdered sugar and about 2 tbsp. hot water. beat until smooth and of spreading consistency. if you like lots of chocolate, double the recipe (we alw

i'm not lying when i say that we have this dish every sunday. i don't think i will ever get sick of it. my mom makes it saturday nights, and right after church we throw it in the oven. it comes out piping hot and delicious. after i've eaten my rather large piece,  i get to snack on it all day. the carmel topping is legit. do yourself and your family a favor and make it this sunday.

caramel pecan bread pudding:

1 13-16 oz loaf French Bread (or delicious cinnamon bread from great harvest), sliced into 1-inch cubes

8 eggs

2 c. half-and-half

1 c. milk

1 tsp. vanilla extract

2 Tbsp. sugar

1/4 tsp. ground cinnamon

1/4 tsp. ground nutmeg

dash salt

praline topping (recipe follows)

put the bread cubes into a greased 13x9 inch baking dish (or individual dishes). combine eggs, half-and-half, milk, vanilla, sugar, cinnamon, nutmeg and salt. pour mixture over bread. cover with foil and refrigerate overnight.

praline topping:

1 c. butter

1 c. brown sugar

2 tbsp. light corn syrup

1/2 tsp. ground cinnamon

1/2 tsp. ground nutmeg

1 c. chopped pecans

prior to serving, preheat oven to 350. melt butter in a small saucepan over medium heat. add brown sugar, corn syrup, cinnamon, nutmeg and pecans. stir constantly until smooth. spread topping evenly over bread. bake uncovered for 40 mins or until puffed and golden brown. (bake 20-25 mins if you made them individually).

entertaining / last minute thanksgiving recipes / part 1 of 2

thanksgiving is in two days! i can't believe it! i wanted to share with you some recipes that my mom has relied on for many years. the many sides are my favorite part of thanksgiving, and they are foods that you don't really eat at any other time of year (which is probably what makes them so special). my absolute favorite dish is the coconutty sweet potatoes, they are basically a dessert. i know most of you probably have your thanksgiving meals all planned out, but for those of you who are looking for some new delicious recipes, here you go!
